REW 2022 Onyx Cabernet Franc

Hand-harvested from our Heron Pond Benchland Vineyard on October 21 at 22.8° Brix, then naturally dried in our custom Appassimento chamber for 82 days, reaching 29.2° Brix with 30% weight loss. Following small-batch fermentation, the free-run juice aged 28 months in French oak barrels, 50% new. Aromas of black raspberry and Bing cherry lead to ripe red and black fruits, crushed violet, red plum and mocha, with rich texture, silky tannins and a long, elegant finish.
