REW 2022 Obsidian Cabernet Sauvignon

Hand-harvested from our Heron Pond Benchland Vineyard on October 29 at 23.1° Brix, then naturally dried for 80 days in our custom Appassimento chamber, reaching 29° Brix with 32% weight loss. After more than three weeks of fermentation, the wine aged 28 months in French oak barrels, 50% new. Aromas of red plum and black licorice lead to concentrated black currant, blackberry and anise, with an opulent, highly structured palate and a long, persistent finish.
